Five refreshing summer mocktail recipes to try

There’s nothing quite like kicking back with a crisp, refreshing drink to cool you down in the summer heat. But what if you want to enjoy all the fruity flavours of your favourite cocktails, minus the alcohol? Try these alcohol-free versions of five traditional summer cocktails. So you can enjoy your Piña colada – as the song says – without getting caught in the rain!

Mojito mocktail

Serves: one

What you’ll need:

  • 1/3 of a glass of apple juice
  • 1/3 of a glass of sparkling water
  • 2 limes
  • 12 fresh mint leaves
  • 1 tsp of sugar
  • crushed ice

Method: Muddle the sugar and mint leaves together and place them into a glass of your choice. Add the crushed ice and top up with the soda water and apple juice. Squeeze in the juice of one lime and garnish with a few extra lime wedges.

Non-alcoholic Aperol spritz

Serves: one

What you’ll need:

  • 20ml grenadine
  • 20ml fresh grapefruit juice
  • 100ml tonic water or sparkling water
  • 1 grapefruit, sliced into wedges
  • ice

Method: Place some ice into a large wine glass to help it cool. Add the grenadine and grapefruit juice and stir gently. Top with the sparkling or tonic water and add a few wedges of fresh grapefruit.

Virgin Piña colada

Serves: two

What you’ll need:

  • 1 cup coconut water
  • 1 and 1/2 cups of pineapple juice
  • 1 cup coconut milk
  • 2 tbsp of sugar
  • 2 tsp of chopped ginger
  • juice of 1 lime
  • fresh pineapple

Method: Freeze one cup of the pineapple juice and the coconut water in ice cube trays. Once frozen, place all the ice cubes into a blender. Pour in the remaining pineapple juice and add the coconut milk. Add the ginger and sugar and squeeze in the lime juice. Blend all the ingredients together well and pour into two glasses. Add a fresh wedge of pineapple to garnish – umbrella optional.

Alcohol-free Pimms

Serves: two

What you’ll need:

  • 40ml diet ginger beer
  • 40ml chilled, black tea
  • a handful of mint leaves
  • 1/2 tsp balsamic vinegar
  • 1/2 tsp dark, soft brown sugar
  • sugar-free lemonade or lemon soda
  • fruit of your choice (we recommend cucumber, strawberries and oranges)
  • ice cubes

Method: Pour the black tea in a large jug and place in the fridge to chill. Slice the fruit into small chunks. Once cooled, add the ginger beer, balsamic vinegar, lemonade and brown sugar to the jug of iced tea and stir well. Add the ice and a handful of mint leaves, and gently mix again. Make sure the sugar has dissolved before serving.

Non-alcoholic Sangria

Serves: three

What you’ll need:

  • 1 cup boiling water
  • 1 black tea bag
  • 1 cinnamon stick
  • 1 tsp sugar
  • 1 ½ cups grape juice
  • 1 cup of fresh orange juice
  • 1 medium orange, sliced
  • a handful of pomegranate seeds
  • 1 apple, cut into slices

Method: Pour boiling water over the tea bag and cinnamon stick in a cup, and let it sit for five minutes. Then throw away the tea bag and add the sugar until it dissolves. Leave the liquid to cool. Once chilled, combine the iced tea, cinnamon, grape juice, orange juice, orange slices, apple slices and pomegranate seeds in a large jug, and stir well. Refrigerate for at least one hour and serve in cold wine glasses.
